Job Description

The Indian Curry Chef will be responsible for preparing and cooking authentic Indian dishes to a consistently high standard, with particular responsibility for traditional curries, sauces, gravies and associated dishes. The chef will work closely with the Head Chef and kitchen team to ensure efficient kitchen operations, food quality, hygiene and consistency.

Requirements
  • Prepare and cook a wide range of authentic Indian curries, sauces, gravies and speciality dishes according to established recipes and restaurant standards.
  • Demonstrate expertise in Indian spices, herbs, marinades and traditional cooking techniques to maintain authentic flavours and consistency.
  • Prepare meat, poultry, seafood, vegetables, lentils and other ingredients required for curry and main-course dishes.
  • Ensure consistent food quality, taste, presentation and portion control across all dishes.
  • Coordinate with the Head Chef and other kitchen staff to ensure orders are prepared accurately and delivered within required service times.
  • Assist with menu planning, development of new dishes, seasonal specials and improvements to existing recipes.
  • Monitor ingredient and stock levels, assist with ordering and ensure appropriate stock rotation to minimise food waste and control costs.
  • Maintain appropriate food storage, temperature controls, labelling and handling procedures in accordance with food safety requirements.
  • Follow all food hygiene, HACCP, allergen management, health and safety and cleaning procedures.
  • Maintain a clean, organised and hygienic workstation, kitchen equipment and food preparation areas.
  • Support the training and development of junior kitchen staff in Indian cooking methods, recipes, portion control and food safety procedures.
  • Work efficiently during busy service periods while maintaining high standards of food quality and presentation.
  • Ensure appropriate management of allergens and prevent cross-contamination during food preparation.
  • Report equipment faults, stock shortages, food-quality concerns and other operational issues to the Head Chef or Restaurant Manager.
  • Contribute to the efficient operation of the kitchen and help maintain MOKSHA's standards for authentic Indian cuisine and customer satisfaction.
